Hi is it possible to create folders in Convex Storage to keep things organized.

No, but you can use the database to create whatever structure you like, eg., when an image is created that you'd like to go into a "folder", you can use a table to store the storage id and the "folder" you'd like to associate the image with. But for the actual dashboard view of storage, it's all in one bucket.
