How you guys sell an app for a fixed price? a client wants a app i built on convex for his bussiness but its hosted on my server.
How you guys deliver like that?

If they want to run and maintain it themselves, I would charge for the work done, and the deliverable is the code. You may also need to transfer the Convex project to them (support can help with this).
If they don't want to run and maintain it, (not that there's much to maintain with a Convex app), assuming you're up for doing so, you could bill them the monthly costs plus your own monthly fee.
In either case I would still charge that same up front cost for the work done creating the app.
They have a fixed budget, for me would be easier for me to simply charge them a monthly fee that covers the costs. I was thinking of calculating the monthly expenses and adding them on top of the budget.
I'll discuss with them whether they have a technical team that can manage it, but I doubt they do. It's likely that I'll have to handle the operation and maintenance for several years, which concerns me

Yeah ongoing management can be a pain. You could timebox it up front and say here's the cost for app + (1 year / 6 months, whatever) of service/maintenance, by which point they agree to have someone take over ownership. You'll also want to consider whether usage may bring significant operating costs and account for that.
agreed, it's that or you charge them a healthy amount for ongoing maintenance. Depends on the size of the company and what they'd expect from the maintenance but I wouldn't do it for less than £450p/m
