Monorepo example
the example seems to have everything in the monorepo acting under one project, if im not mistaken?

I think I didn't quite follow your desired outcome. You want multiple convex projects in a single mono repo?
You should be able to have multiple "backend"s in this folder and make sure the client side code is connected to the right url: https://github.com/get-convex/turbo-expo-nextjs-clerk-convex-monorepo/tree/main/packages
